Ingredients
- 2 eggs + enough water to make up to 450 gr
- 50 gr sugar
- 660-720 gr flour
- 2 teaspoon quick yeast
- 30 gr melted butter
- 1 tablespoon of salt
- 1 teaspoon vanilla
- For the butter;
- 425 gr butter
- 1 teaspoon of salt
- 60 gr flour
Preparation

For dough;
Take the egg and water in a bowl. Add a tablespoon of sugar, 360 g of flour and yeast. Mix until thick and set aside to activate the yeast.
For the butter;
Chop the butter into cubes and beat it with the flour and salt in the mixer. Spread the mixture on a cling film and form a large square. Wrap it all up and keep it in the fridge for 30 minutes.

The rest of the dough:
Add the melted butter and remaining sugar to the yeast mixture. Add 300 gr flour and salt and knead for 5 minutes. If the dough is sticky, add another 1-2 tablespoons of flour until you reach the desired consistency. Shape the dough into a square, wrap it in cling film and let it rest for 30 minutes.
Unroll the dough that has rested in the refrigerator more. Place the butter diagonally in the middle and cover the butter with the outside edges of the dough.
Gently roll out the buttered dough lengthwise. While rolling out the dough, take care to open it gently by applying pressure with a rolling pin. Do not carry the butter.
Fold the dough in 3 layers, stretch it and put it in the fridge. Keep it in the fridge for 30 minutes.
At the end of the time, take the dough out of the cabinet, open it lengthwise again and fold it in the same way, stretch it and put it in the cabinet.
Let stand for another 30 minutes. Do the same for the 3rd time.

Finally, roll out your dough into a large rectangle and cut the edges neatly. Get triangles.
Make a scratch on the long side of the triangle, open the dough slightly with your hand and wrap it tightly.
Place on a baking tray lined with greaseproof paper. Fermentation is the most important process. Let it ferment for at least 2-3 hours.
Mix egg yolk with milk and spread on croissants.
Bake in a preheated 200 degree oven for 10-15 minutes.
